The question I have no, is if I can program the Raspberry Pi Zero 2W to take pictures every 2 minutes for 24h and if a 20.000 mAh power back will be enough.
Short answer: Yes, maybe.

Long answer: Yes, libcamera can do timelapse. It should easily be able to handle one image every 120 seconds, or video at 1 frame every 120 secs.

No. The Pi Zero 2W typically needs at least 350mA at 5V which is 1.75W. That's without a camera. Over 24 hours that will be 42Wh.

Your 20000mAh power bank can supply a maximum of 74Wh (20Ah @ 3.7V) although it won't really give that much. Maybe 75% of that at best. So 55Wh. So possibly, with the camera.
But you don't want to risk the power running out before the Pi can stop recording and shut down cleanly or you will get SD card corruption and possibly lose the whole recording.

How about a Pi Zero W? That only needs a minimum of 150mA (without camera) which is 0.75W. Over 24 hours that will be 18Wh. Much better. The Zero W should be powerful enough to record timelapse for you.
