You may want to try connecting your HDD through a powered USB 3 hub.
I used to have a bunch of issues with a USB 3 NVME drive on my Pi4. It either would refuse to boot, or would crash after some time. I had issues regardless of whether UAS was enabled or not. However, the drive worked without fail on a USB 2 port. I thought that for sure there was no power issue, because I am using the official PoE+ HAT, which is supposed to provide 4A.
Regardless, I eventually tried a powered hub, and my problems instantly went away. Annoying that this is required, as the whole reason I bought the PoE+ HAT was so that I didn't need to be near a power source, but I am glad that I found a solution.
