I run a server version on an 8GB Pi 5 with no problems (it zips along quite nicely!), but I am running from an SSD connected over USB3. SD cards are really very slow, and particularly if you are running a GUI then this may be part of your problem. Try installing/booting from an SSD on the USB3 and see if it helps. (You can also use an NVME with the right add-on board, connected to the on-board PCIe, which should be faster still...)
