The performance loss between the 4GB and 8GB models was 57 percent when over clocked to 2800 MHz running stress-ng.The other issue is one of RAM performance on the BCM2712-based systems. There does appear to be a small difference in RAM performance in favour of the 4GB Pi 5 boards at the moment, so scaling up to 16GB could perhaps show a greater drop off in performance relative to the already marginally slower 8GB boards.

This may have changed since firmware updates but I haven't seen anyone rerun the test.
