Hi, yes, the Camera Module 3 is going to be quite challenging in applications like this. Firstly, it has a rolling shutter, and secondly, because it has autofocus the lens is mounted on the end of what is, essentially, a wobbly spring. Even if you set this to a fixed position manually, this doesn't get round the fact that it's still on the end of a wobbly spring. Cushioning and shielding may help a bit, but are probably limited in their effectiveness.

The v2 camera module would behave better in applications like this because it doesn't have autofocus. It is still, however, a rolling shutter sensor, so you will get the "jello" effects.

The global shutter sensor is almost certainly going to give you better results. There is no lens wobble, and no jello effect. Artefacts like lens distortion and camera shake should in theory be fixable as a post-processing step if you wanted. It is, of course, rather larger and heavier.
