Also tried adding @reboot /usr/bin/chromium-browser to my user's crontab, also does nothing.

I think you'l find that it is doing something but what it's doing ins't very useful. It'll be throwing an error because:
  • @reboot cron jobs run before the desktop has started
  • Even if the desktop has started cron doesn't know which desktop to connect to. Yes, you probably only have one but Linux supports many more so things need to be told which one to use.
  • Even then, security settings within the desktop may prevent it from starting.
At this point I am completely lost as to how to make this work, I have 10 other Pis where I edited autostart file without any problems to open chromium. Does anyone have any ideas how I can fix this or work around it?

Are all eleven Pi the same model and running the same major OS release? Bookworm made some significant changes that impact this and other areas. Some of those changes affect all models. Some, as already stated, only affect those with 2GB or more RAM.
