Raspberry Pi can run from a 16 GB card if you do not install other applications. I ran some big Linux installations from a 60 GB SSD with no problems so long as I cleaned it up every few months. With a 128 GB SSD, I never had to clean up anything. 100 GB should be plenty.
Media servers and similar are different. Movies in low res can use 3 GB each. Video surveillance can chew up GBs per day. If you have errors, log files can flood space, one of the reasons for checking free space occasionally.
