pico W and C and MQTT then use LWIP MQTT.
LWIP is provided by the C SDK.
There are samples available, see e.g. https://github.com/cniles/picow-iot amd possibly a lot more.
Have LWIP MQTT running on one of my pico since years.
Although programming in C and 'simple' don't mean the same thing.
If you need a quick start, then build a prototype with micropython.
