I dont think they do it on server, otherwise it cannot not be sold to many without dedicated internet.
That's a limitation of many/most "smart" devices nowadays.

For example, my Wyze products cease to function when their servers or my Internet is down (can't even turn my lights on/off).

I can understand that for more complex products (like security cameras), but why can't a light bulb operate locally without servers, do they really need the processing power of a server to turn a light bulb on/off? It was super annoying when Wyze had a multi-day server outage last year.

Many smart products end up orphaned and no-longer functional when the company drops support (or goes out of business).
